SALMON
- 4 filets should get 8-12 cubes out of each filet
- 2 tbsp olive oil
SEASONING MIXTURE
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp chili powder
- 1 tbsp brown sugar
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
ROASTED CORN
- 1 can sweet corn
- salt to taste
- fresh cilantro
CABBAGE SLAW
- 8 oz shredded cabbage bag
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 2 tbsp greek yogurt
- 1/2 lime juiced
- 1/2 tsp salt
- 1/3 cup fresh cilantro chopped
AVOCADO SAUCE
- 1 avocado or 2 small
- 1/4 cup sour cream
- 1/4 cup greek yogurt
- 1 lime juiced
- 1/2 tsp salt
- 1 jalapeno
- 2 tbsp olive oil
ASSEMBLE
plate rice, top with blackened salmon, place corn, cabbage, and avocado sauce. I like to add freshly sliced avocados, fresh cilantro, and some lime wedges to this too.
