Also known as “lazy aushak” is really just all the contents of Afghan aushak topped over pasta/noodles. But it doesn’t just end there for me. I like to create layers upon layers and give each layer a love of its own. Starting from the ground beef, to the sautéed green onions, the yogurt mixed with dried mint- then all topped with fresh cilantro and dried mint.
With about 750k views on Instagram, 22,500+ saves, 30,000+ likes, and SO MANY recreations. This recipe is hands down a favorite. Coming in at top 5 recipes I’ve shared to date. CHILDHOOD MEMORIES
About 99% of Afghans will remember this as their childhood dish and even as adults we still love it so much. Now I’ve passed the addiction on to my children who ask for this at least 1-2 times a month. And let me tell you- I’ll never say no.
You may have grown up eating a variation of this dish- maybe with red kidney beans added as well. Either way you can never go wrong.

AFGHAN PASTA
Ingredients
GROUND BEEF/MEAT SAUCE
- 1 lb ground beef
- 1 onion
- 1 tbsp minced garlic
- 1 tbsp ground coriander
- 1 tsp salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried mint
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- 1/4 tsp cayenne optional for spice
- 1.5 cup water
- 3 tbsp tomato paste
- 1 15oz can tomato sauce
TOPPINGS
- 2 bunches sautéed green onions chopped
- 1 bunch fresh cilantro chopped- garnish
- yogurt mint sauce plain yogurt, salt, dried mint, and a splash of water

PASTA
- 1 16oz box
Instructions
PASTA
- bring water to boil for pasta and begin to cook pasta according to package directions while you are making ground beef
GROUND BEEF/MEAT SAUCE
- sauce the onion in some oil. once translucent- add in ground beef and minced garlic. allow this to brown for about 5 minutes
- add in all the spices listed for ground beef and brown for another 5 minutes
- add the water and close the lid to cook through until liquid has evaporated
- then add the tomato paste and tomato sauce
- leave on low simmer for a few minutes until sauce comes together
PASTA
- when pasta has cooked, add in a few spoonfuls of meat sauce to the pasta and let the sauce coat the noodles well
ASSEMBLE/LAYER
- on your serving platter- a spread of mint yogurt
- top with pasta
- top with green onions, meat sauce, and more yogurt
- repeat one more time
- on the final top layer add fresh cilantro and dried mint
