Take me back 🖤

Finally think today is the day i can do a recap from our 🇹🇷 trip. The little I’ve posted so far is saved to 3 highlights (Istanbul, Antalya, + Cappadocia) I’ll hop on stories in a bit, drop a question box, + answer anything i haven’t been able to so far.

For those of you who may not know- we recently went on a family trip to Turkey/Türkiye with the kiddos. I was a little scared of the 13 hour flight with them. Would they get antsy? Impatient? - but boy, they were troopers!! On the plane rides, the 3am wakeup calls, site seeing, ALL of it.

Made the best memories with them + this husband of mine 🤍

I had a thought which then turned into an essay in

I had a thought which then turned into an essay in my notes.

I was prepping lunch/dinner for my family and as i started to cook i realized it was 2 recipes i haven’t shared with you all so i grabbed my recording tools and started recording steps. This just naturally turned into 2 new videos to share with you all.

Then i thought- wow, why was that SO much easier to record compared to all other recipe posts. I quickly was reminded of how i started on here. All i did was simply share with you all what i made daily for my family with NO recording tools, just me and my iPhone and what came after was never something i imagined.

What did happen was- my friends and family showed me so much support, rooted for me to keep posting, recipe requests from strangers started rolling in… and here we are now.

My point in writing this out is to tell you- If you love what you’re doing daily and you’re doing it for YOU- once it’s shared, that shines through. The love behind it shines through. Don’t worry about the fancy recording tools, the expensive cameras, the kitchen that may seem like it’s not “perfect” in your eyes- because guess what? You all came to join me on my journey without any of that in the beginning.

I’m thankful. Thanks for being here + continuing to motivate me 🤍

WHIPPED FETA DIP with roasted tomatoes•

This is SO easy to throw together to serve as a side dip + so pretty to add to your summer table spread. Add roasted tomatoes to the top or anything else you prefer- you can’t go wrong!

HERE IS ALL YOU NEED TO DO:
-roast some tomatoes with olive oil, salt, and black pepper until they’re nice + blistered
** i used my @june oven
-in a processor combine:
•8 oz block of feta (broken)
•1/2 cup plain Greek yogurt
•1-2 TBSP honey
•2 TBSP olive oil
•sprinkle of salt + black pepper
•splash of water
-process until smooth

SERVE + top with the roasted tomatoes
GARNISH with black pepper, olive oil, and fresh basil
DIP with your favorite cracker or freshly toasted baguette

BUFFALO CHICKEN SLIDERS• -if you remember my favor

BUFFALO CHICKEN SLIDERS•
-if you remember my favorite bbq sliders, here is the buffalo version 🤍

The 2 main things you need for these are shredded chicken + sliders. Kings Hawaiin rolls are good but i find myself grabbing the Trader Joe’s aloha rolls more. Either will work.

How you shred your chicken is really up to you. You can bake then shred, boil then shred, pan cook then shred, etc. Personally I’ve tried them all and prefer pressure cooking then shredding. They all give the same result in the end so it really comes down to preference 🤍

Here is how i made the sliders:
-oven temp 400
-to my cooked then shredded chicken (3-4 breast) i added
-1 cup Buffalo wing sauce
-1/2 cup ranch
-1 TBSP ranch seasoning powder (optional)
-handful of fresh parsley
MIX and lay out an even layer between the rolls
*** if you’d like to add cheese, top it over the chicken now.
-Then brush the tops of the rolls with melted butter (i mixed fresh parsley in mine)
-bake until golden (8-10 minutes depending on the type of bread you chose)
PULL APART + ENJOY 🤍

Chicken + Rice FLATBREAD•

If you made my one pot chicken and rice recipe and have some left over- here is what to do with it. Throw it onto a flatbread, make a wrap, or a bowl.

To change it up just a bit more- make a quick sauce. See next image for what i used in my sauce.

Sometimes life gets so busy that some grocery runs

Sometimes life gets so busy that some grocery runs don’t necessarily mean I’ll be cooking right away- but more so, just shopping to prep for the busy days ahead.

How to get through this and prepare even faster? Great knives! Sharp and good quality knives make all the difference in the kitchen when it comes to prepping and less time spent. I’m using @wusthof Classic 8" Chef's Knife, Classic 7" Hollow Edge Santoku Knife, and the Classic 6" utility knife.

Here are a few ways I like to have a stocked fridge with 50% of the work done ahead of time:
•FROZEN HERB CUBES.
-these are great for soups, stews, and salad dressings.
•SLICED BELL PEPPERS:
-great for a quick stir fry, burritos, bowls, salads, in your eggs, and so much more.
•FRESH FRUIT:
-strategically ones you can continue to use in different ways. When watermelon and pineapple are already cut- they’re great to eat on its own, throw into your smoothies, or make a watermelon salad. Best part is whatever you find yourself not being able to finish- just throw it in the freezer!
•MARINATED MEAT:
-i give myself 2 options and try to stretch it into 4 meals. Here i did chicken thighs in a simple yogurt, turmeric, coriander, and Aleppo pepper marinade. This will be good for chicken and rice options, flat bread, etc. Also did some skirt steak marinated in orange juice, lime, fresh cilantro, and seasoning. This will be good for fajitas, burritos, steak salads, etc.

Finally, not only making sure my fridge stays as organized as possible to get me through the busy week but that my kitchen tools + knives stay just as organized.
