AFGHAN PASTA
Also known as "lazy aushak" is really just all the contents of Afghan aushak topped over pasta/noodles. But it doesn't just end there for me. I like to create layers upon layers and give each layer a love of its own. Starting from the ground beef, to the sautéed green onions, the yogurt mixed with dried mint- then all topped with fresh cilantro and dried mint.

GROUND BEEF/MEAT SAUCE
- 1 lb ground beef
- 1 onion
- 1 tbsp minced garlic
- 1 tbsp ground coriander
- 1 tsp salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried mint
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- 1/4 tsp cayenne optional for spice
- 1.5 cup water
- 3 tbsp tomato paste
- 1 15oz can tomato sauce
TOPPINGS
- 2 bunches sautéed green onions chopped
- 1 bunch fresh cilantro chopped- garnish
- yogurt mint sauce plain yogurt, salt, dried mint, and a splash of water

GROUND BEEF/MEAT SAUCE
sauce the onion in some oil. once translucent- add in ground beef and minced garlic. allow this to brown for about 5 minutes
add in all the spices listed for ground beef and brown for another 5 minutes
add the water and close the lid to cook through until liquid has evaporated
then add the tomato paste and tomato sauce
leave on low simmer for a few minutes until sauce comes together
ASSEMBLE/LAYER
on your serving platter- a spread of mint yogurt
top with pasta
top with green onions, meat sauce, and more yogurt
repeat one more time
on the final top layer add fresh cilantro and dried mint
