These saffron butter kabobs will have everyone thinking they just came off the grill. And yes, you can put wooden skewers right into the air fryer.
Create smaller cubed chicken cuts- and as even as you can get them. So much goodness goes into this marinade. From greek yogurt, to liquid saffron, and freshly squeezed lemon juice- by the time you’re done mixing this you can smell how delicious it will be.
The saffron butter is saffron threads seeped in melted butter then brushed onto the skewers just a few minutes (2-5) before the air fryer time is up. Serve with some warm naan + be prepared to continue making this one.


SAFFRON BUTTER KABOB
Equipment
- air fryer I'm using a 9 QT
- bamboo skewers
Ingredients
KABOB
- 10 pc chicken used tenderloin
- ¼ cup oil used avocado
- 1 tbsp minced garlic or garlic paste
- 1 tbsp ground coriander
- 1 tbsp onion powder
- 1 tsp sumac
- 1 tsp turmeric
- salt + black pepper to preference
- 1 lemon juiced
- ¼ cup liquid saffron or saffron threads seeped in 1/4 cup water
- ⅓ cup greek yogurt plain
SAFFRON BUTTER
- 3 tbsp butter melted
- saffron threads pinch
BREAD
- naan or bread of choice
GARNISH
- sumac
- freshly chopped parsley
Instructions
KABOB
- place evenly cubed chicken into a mixing bowl
- add all of the kabob ingredients and mix well
- begin to skewer chicken onto bamboo skewers (about 5-6 pieces per skewer)
- place skewered kabobs into the air fryer
- air fry at 420° for 20 minutes (if your pieces are larger, increase time to 25)
SAFFRON BUTTER
- while the kabob is in the air fryer melt butter and place saffron threads in them to start seeping
KABOB
- when there is about 2-5 minutes left on air fry time brush on melted saffron butter and finish off the time
PLATING
- plate your skewers
- serve with a side of warm naan
- garnish with sumac and fresh parsley
