CREAMY CAJUN SALMON PASTA

loaded with spices like old bay seasoning both on the salmon and in the creamy sauce

Ingredients
  

SEASONING MIXTURE

  • 1.5 tsp old bay seasoning
  • 1.5 tsp salt
  • 2 tsp paprika
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp oregano
  • 1/2 tsp chili powder

SALMON

  • 3 large filets cut in half for 6 pieces

SAUCE

  • 2 tbsp butter
  • 2 tbsp oil
  • 1/2 onion diced
  • 1 tsp garlic minced
  • 6 mini sweet peppers chopped (or 2 bell peppers)
  • 2 tbsp tomato paste
  • 2.5 cup heavy cream 3 cups for full use of 16oz package of pasta
  • 1/3 cup pasta water reserved from pot
  • parmesan cheese as much as you love

Instructions
 

PASTA WATER

  • begin to boil pasta. Salt it. and reserve 1/3 cup of the water in the end

SEASONING MIX

  • create your seasoning mixture

SALMON

  • season your fish on both sides with half of your seasoning mixture
  • cook salmon in a pan with butter + oil on both sides until cooked through + set aside

SAUCE

  • now begin on your sauce
  • to the same pan add in 1 more TBSP of butter, onion, and minced garlic
  • once sautéed, add in the sweet peppers or bell pepper
  • add the tomato paste + remainder of seasoning. mix well
  • add heavy cream and allow for this to come to a full boil. then add in parmesan cheese
  • place your cooked pasta in with the reserved pasta water
  • mix and on low heat allow this to come to a full boil again and let sit for 2-3 minutes until thickened

SERVE

  • plate your pasta. top it with the salmon pieces and fresh parsley

    Notes

    I used a little less than half a package of 16oz pasta here. If you are using the full box- increase your heavy cream measurement to 3 cups.
