BUTTER CHICKEN PASTA

Skip the butter chicken and rice and go for pasta instead. Same great flavors and a little more fun.

Ingredients
  

16oz pasta of choice

CHICKEN

  • 2 chicken breast cubed
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp turmeric
  • 1 tbsp minced garlic
  • 1 tbsp ginger paste
  • 1/4 cup oil
  • 1/2 cup plain yogurt

SAUCE

  • 1 small onion chopped
  • 3 tbsp butter
  • 2 tbsp tomato paste
  • 1 cup tomato sauce
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp turmeric
  • 1 cup heavy cream

SERVE AND GARNISH

  • plain yogurt
  • fresh cilantro
  • red crushed peppers optional for heat

Instructions
 

PASTA

  • Cook pasta according to package directions
  • RESERVE 1/3 cup pasta water for sauce

CHICKEN

  • combine cubed chicken with all it's spices.
  • mix well and begin to cook in a hot pan with no additional oil
  • once cooked through. set aside
  • in the same pan begin to cook your sauce

SAUCE

  • sauce your onion then add your butter to it and tomato paste. mix well
  • add in all your dry spices. mix
  • add tomato sauce
  • add cream
  • allow it to come to a quick boil
  • OPTIONAL: blend in a blender for a smooth consistency
  • place chicken back in pan and pour blended sauce over it
  • add 1/3 cup pasta water
  • allow it to all come together on low heat. and add pasta in
  • let simmer on low heat for 3-5 minutes

SERVE

  • top with a drizzle of plain yogurt, fresh cilantro, and red crushed peppers for heat
