These masala burgers are a new favorite around here. If you’ve been here a while you may have tried my cilantro burger- if you loved that one and want to try something new.. THIS IS IT. The yogurt masala and red chutney used as a sauce for these burgers take it next level! Top it with some fresh cilantro and red onions… + WOW!

ARE YOU TEAM SINGLE PATTY OR DOUBLE PATTY?
Myself, I usually prefer a single patty but I was feeling a little wild with this one and went for the double!. Overall i think I’m still team single though since you get more sauce ratio per bite. Either way, you can’t go wrong.

IT’S ALL IN THE SAUCE
Isn’t it always? It is around here! The red chutney here adds a perfect kick of spice while the yogurt masala balances it all out. And the yogurt masala is so simple too. All i did was take what was left of the burger seasoning and add it to plain yogurt with some salt and dried mint. Delicious!

BURGERS (for 2lbs ground beef)
- portion into 8 even forms. preferably placed onto parchment squares for easy handling.
- smash them down either by hand or with a press. these don't have to be perfect. they will look quite large- that's okay because they'll shrink while cooking

- in a hot cast iron place them season side down then season the flip side too
- cook 2-3 minutes per side until cooked through + set aside
TOAST BRIOCHE BUNS
- toast buns in butter + set aside
MASALA YOGURT
- to some plain yogurt add a sprinkle of salt, dried mint, and about 1-2 tsp of the remainder masala seasoning.
ASSSEMBLE
- spread masala yogurt on base of buns
- top with single patty or double ( if there's masala seasoning left I like to sprinkle some more on each patty while assembling)
- top patty with red chutney OR your favorite hot sauce (maybe sriracha or a chili garlic sauce)
- top with fresh cilantro + red onions
- close that bun
