ONE POT CHICKEN and RICE
lemon chicken with saffron rice cooked in one pot. an easy, delicious, and mess free meal.

Ingredients
CHICKEN
- 5 pc chicken thigh
- ¼ cup oil
- ⅓ cup greek yogurt plain
- ½ lemon juiced
- 1 tbsp ground coriander
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp Aleppo pepper
- ½ tsp turmeric
- salt to preference
RICE
- 1 ½ cup rice washed
- 1 small onion chopped
- 2 garlic cloves minced (or 1 tsp minced garlic)
- ½ tsp turmeric
- ½ tsp sumac
- saffron threads sprinkle
- 2 tbsp butter
- 1 cup stock I used chicken
- 1 ½ cup water
GARNISH
- 1 lemon sliced (grilled/seared optional)
- fresh cilantro handful
Instructions
STEP 1:
- combine chicken and all its seasonings and mix
- in a pan with a little oil or butter, add chicken and cook 4-5 minutes on each side until nicely browned then set aside
STEP 2:
- into the same pan (once chicken is removed) add chopped onion and garlic and sauté
- add in the turmeric, sumac, and saffron threads. mix well
- add in washed rice and stir a few minutes until rice browns a bit
- add butter and saffron threads
- top with stock and water
- let the liquid come to a boil and close the lid. leaving heat on low
- once the liquid has evaporated completely, your rice grains will be perfectly cooked (if it needs some more time- close the lid and keep on low, allowing the steam to cook it a few more minutes)
STEP 3:
- add chicken over rice. you can leave this whole or sliced
- top with fresh lemon slices (or grilled- I seared mine in a pan for a second. this allows the natural lemon juice to release onto the rice and adds more flavor)
- add fresh cilantro
STEP 4:
- serve + enjoy
