Tandoori chicken pita’s are a summer favorite. This recipe is so light and flavorful. The tandoori chicken marinade is not complicated and the cilantro sauce can be made in minutes.

TANDOORI CHICKEN PITA

Add this tandoori chicken pita recipe to your summer rotation meals. You don’t need a grill- just grab a hot pan. 4 minutes on each side and you’re good to go. Use whatever vegetables you have on hand or love, I went with red onions and cucumbers. Make a quick cilantro jalapeño sauce OR create a simple plain yogurt sauce. Lunch/Dinner is served.

Equipment

  • processor for sauce
  • cast iron or pan of choice

Ingredients

GROUND CHICKEN

  • 1 lb ground chicken
  • 1 small red onion chopped
  • fresh cilantro handful
  • ½ tbsp garam masala or more to your liking
  • 1 tbsp minced garlic
  • ½ tsp ginger paste
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp dark chili powder or paprika
  • salt to taste
  • black pepper to taste
  • ½ lemon juiced

CILANTRO SAUCE

  • 1 jalapeno
  • ½ cup fresh cilantro
  • ½ tsp minced garlic
  • salt to taste
  • 1 tbsp olive oil
  • ½ cup greek yogurt
  • water splash

TOPPINGS

  • red onion thinly sliced
  • cucumber thinly sliced
  • fresh cilantro chopped

BREAD OF CHOICE

  • pita

Instructions

STEP 1:

  • combine all ground chicken ingredients and mix

STEP 2:

  • form patties (should give you 6)
  • cook in a HOT cast iron with a little oil. 4 minutes per side on medium high heat.

STEP 3:

  • create cilantro sauce by combining all ingredients into a small processor. or use a sauce of choice

STEP 4:

  • warm pitas over open flame on stove

STEP 5:

  • assemble. cut pita in half, lay one piece of chicken, top with red onions and cucumbers, add sauce, top with fresh cilantro. fold over
