Pasta is always a great idea in our house. How many flavors/ sauce variations can we really come up with? I don’t think there will ever be an answer as it’s endless. From super simple to something complex- pasta is just amazing.

This recipe is light, easy, and delicious. We find ourselves making it the most on hot summer days. There are very few ingredients- ones you probably have on hand and takes about 20 minutes to throw together.

LEMON BUTTER shrimp pasta

a quick, easy, flavorful pasta that's perfect in time for summer meals

Ingredients

SHRIMP

  • 1 lb shrimp mine were raw, peeled, and deveined
  • 1 tsp lemon pepper
  • 1 tsp paprika
  • salt to preference
  • oil drizzle

PASTA SAUCE

  • 2 tbsp butter
  • 1 tbsp minced garlic
  • 2 tbsp AP flour
  • 1.5 cup stock or water
  • 2 lemons juiced
  • 1 tbsp lemon zest
  • salt and black pepper to taste
  • 1 tsp onion powder
  • ¼ cup parmesan cheese grated
  • ½ cup pasta water

GARNISH

  • fresh parsley

Instructions

PASTA

  • start off by boiling salted water and cook your pasta
  • don't forget to reserve some pasta water

SHRIMP

  • add seasoning to shrimp and mix
  • cook until golden on both sides then set aside leaving all the juice at the bottom of the pan

SAUCE

  • add butter and minced garlic. once that sautéed down-
  • whisk in flour
  • work quickly and add in stock, lemon juice, and lemon zest
  • mix and add in seasonings (salt, black pepper, and onion powder)
  • add in cooked pasta
  • top it with reserved pasta water and parmesan cheese
  • on low heat let the sauce coat the noodles

SERVE

  • plate the pasta, top with shrimp, and fresh parsley
  • ENJOY
